Khyati's Health-O-Meter Says:

Tabbouleh is a salad like no other, made with fresh vegetables, spices and the "it" grain, Bulgar. Adding a generous amount of parsley and cucumber leaves you refreshing, especially during summer to beat the heat. The use of Bulgar provides an extra punch of proteins and fibre. A drizzle of garlic-flavoured olive gives a special kind of flavour, which leaves a tingling taste on your taste buds. The salad is seasoned with the right amount of spice and herbs hence making the salad overall nutritious.

INGREDIENTS:

  • Bulgur - 3 tbsp
  • Mixed veggies [cucumber, beans, spring onion] [chopped] - ½ cup
  • Parsley [chopped] - 2 tbsp
  • Lemon juice - 1 tsp
  • Garlic [chopped] - 1 clove
  • Olive oil - ½ tsp
  • Salt - as per taste
  • White pepper powder - as per taste

DIRECTIONS:
Step 1 Place the Bulgur wheat in a heatproof bowl and pour four cups of boiling water over it.  Step 2 Set aside until the Bulgur absorbs the water and becomes tender. In a bowl mix together cucumber, beans, spring onion, parsley, lemon juice, oil, salt, and white pepper powder.  Step 3 Add the bulgur wheat and mix well.  Step 4 Serve culd.
