Zucchini is packed with beneficial nutrients including Vitamins C and A, potassium, folate, and fiber. All contribute to a healthy heart by decreasing the risk of stroke, reducing high blood pressure, and lowering cholesterol. Dates are an excellent source of iron, potassium, calcium, manganese, copper, and magnesium.

INGREDIENTS:

  • Green zucchini vertical thin slices - 2
  • Seedless dates - 2
  • Mint leaves - 6-7
  • Soy sauce - 1 tsp
  • Ginger juice - ½ tsp
  • Red chilli powder - a pinch
  • Crushed red chillies - ¼ tsp
  • Lemon juice - 1 tsp
  • Salt - to taste
  • Oil -  ½ tsp

DIRECTIONS:
Step 1 Chop 4-5 mint leaves and put in a bowl.  Step 2 Add the mix mashing slightly. Keep them on a plate, sprinkle salt, soy sauce, ginger juice, chilli powder and set them aside for a while to soften.  Step 3 Stuff cheese mixture into the dates.  Step 4  Heat oil in a non-stick pan. Wrap one stuffed date in each zucchini slice and secure with a toothpick. Place these rulls in the pan and cook, turning, till the zucchini gets cooked. Step 5 Chop remaining mint leaves finely and put in a bowl. Add crushed red chillies and lemon juice and mix well. Step 6 Arrange zucchini wrapped dates on a serving plate, drizzle some of this sauce over them and serve.
