Spicy Cajun Chicken Quinoa

Spicy Cajun chicken quinoa makes a yummy meal with a double boost of protein coming from chicken and quinoa. Low in calories, high in fiber, minerals, and vitamins such as B vitamins, and prepared in a healthy cooking method such as baking, served on a bed of steamed leafy greens, Cajun chicken quinoa makes a perfect dish.

INGREDIENTS:

  • Chicken - 50 g, palm size
  • Cajun seasoning - 1 tsp
  • Uncooked quinoa - 15 g
  • Chicken stock / plain water - 1 cup (alter as per consistency)
  • Olive oil - ½ tsp
  • Salt - use minimum, to taste
  • Onions, finely chopped - ½ small
  • Coriander leaves, finely chopped - to garnish

DIRECTIONS:
Step 1 Heat oven to 180 - 200C. Toss the chicken with the Cajun spice and arrange in a single layer in a roasting tin.  Step 2 Bake for 20 mins until the chicken is cooked. Set aside.  Step 3 Meanwhile, pressure cook the quinoa in the chicken stock for 15 mins until tender.  Step 4 Drain and place into a large bowl with the chicken, toss together. While the quinoa is cooking, heat the oil in a non-stick pan and soften the onions for 10-15 mins.  Step 5 Toss the onions into the quinoa and chicken, mix well garnish with coriander leaves and enjoy hot.
