INGREDIENTS:

  • Spring onions with greens  [chopped] - 2 nos.
  • Button mushrooms  [chopped] - 4 nos.
  • Zucchini  [chopped] - 2 tbsp 
  • Red capsicum  [chopped] - 2 tbsp 
  • Carrot [chopped] - 1 tsbp
  • Bean sprouts [raw] - 30 g
  • Salt - as per taste
  • Sugar - ½ tsp
  • Lemon juice  - 1 tbsp
  • Soy sauce - 1 tsp
  • Iceberg lettuce [whole] - 2 leaves

DIRECTIONS:
Step 1 Mix spring onions with greens, cut mushrooms, julienne zucchini, julienne red capsicum, grated carrot and bean sprouts in a bowl.  Step 2 Add salt, sugar, lemon juice, soy sauce, sweet chilli sauce, and peanuts.  Step 3 Add the torn iceberg leaves just before serving.
