In addition to its delicious sweet taste, corn is high in fiber, low in fat and a great source of essential nutrients offering an array of health benefits. Corn is considered as a starchy vegetable as it contains a high amount of carbohydrates which provide you with short term and long term energy. This dish is wonderfully combined with parsley and lemon dressing tossed with a little amount of extra virgin olive oil which is very abundant in omega 3 and omega 6 fatty acids.

INGREDIENTS:
For the salad:
  • Shallots (thinly sliced) - 50 gm
  • Corn - 20 gm
  • Cucumber - 1 small
  • Red pepper - 1 no.
  • Fresh dill - a handful
  • Fresh parsley - a handful
  • Feta cheese (crumbled) - 10 gm
For the dressing:
  • Yogurt - 15 gm
  • Apple cider vinegar - 1/2 tsp 
  • Garlic (chopped) - 1/2 tsp
  • Olive oil - 1/4 tsp
  • Salt and freshly ground pepper - to taste
DIRECTIONS:
Step 1 Salt the shallot slices in a little salt and allow to sit about 20 minutes to draw out any harshness. Rinse well with water and pat dry with a paper towel.  Step 2 In a large bowl, toss the corn lightly to separate them, add the shallot and the remaining salad ingredients and toss again to combine. Step 3 In a smaller bowl combine the vinegar, yogurt, and garlic and whisk to combine. Add the oil in a slow stream, whisking, until amalgamated. Season with freshly ground pepper and salt to taste. Step 4 Serve the salad slightly chilled, garnished with the feta cheese.
