INGREDIENTS:
  • Cucumber - 2
  • Low-fat Curd -  1/4 cup
  • Fresh mint leaves - 1/4 cup
  • Salt & pepper - to taste
  • Water - as per requirement
  • Cucumber slices and mint sprigs for garnish
DIRECTIONS:
Step 1 In a blender, puree 1 1/2 chopped cucumbers, yoghurt, chopped fresh mint leaves, and salt and pepper to taste and transfer to a bowl. Chill soup at least 6 hours. Step 2 Add in the remaining 1/2 finely diced cucumber and chopped mint leaves. Garnish the soup with cucumber slices and mint sprigs.
