A healthy protein-packed dish with loads of vegetables and aromatic herbs and spices. The dish mainly meets the protein requirements which is mainly derived from chicken and bean sprouts. Other than proteins the dish is also dense in anti-oxidants, fiber and moisture due to the inclusion of varied vegetables and bean sprouts which aids weight loss. The usage of herbs and spices enhances the flavor of the dish.

INGREDIENTS:

  • Boneless chicken, cut into thin strips - 50g
  • Noodles, boiled - 15g 
  • Ginger - 5g
  • Garlic - 5g
  • Onions - 15g
  • Fresh red chillies - 5g
  • Lemon grass stalk, chopped - 5g
  • Rice bran Oil - 1/2 tsp
  • Curry powder - 1/4th tsp
  • Chicken stock /Plain water - 100ml
  • Salt - to taste
  • Red chilly powder - ½ tsp
  • Cucumber with skin - 20g
  • Lemon, halved - 5g
  • Bean sprouts - 15g
  • Fresh mint leaves - 5g

DIRECTIONS:
Step 1 Roughly chop ginger, garlic, shallots, fresh red chilies and put into a mixer jar.  Step 2 Add lemongrass and grind with a little water. Heat oil in a non-stick wok, add chicken and saute for 2-3 minutes. Put boiled noodles in a serving bowl and heat in a microwave oven.  Step 3 Add the ground paste to the chicken in the pan along with curry powder and mix well. Add chicken stock, salt, red chilly powder and mix.  Step 4 Diagonally slice the cucumber. Let it just come to a boil and pour the chicken gravy over the noodles. Squeeze the juice of ½ a lemon and sprinkle on top. Top with cucumber slices and bean sprouts.  Step 5 Garnish with fresh mint leaves and a halved lemon and serve hot.
