These muffins are nutritious and easy to prepare and ideal for breakfast or snacks. Wheat pasta, muesli, and veggies are high in fiber and provide satiety. They're baked, which adds to the recipe's nutritional value.

INGREDIENTS:
  • Wheat Pasta - 30 g 
  • Red and Green Capsicum [chopped] - ¼ cup
  • Spring Onion [chopped] - ¼ cup
  • Muesli [crumbled]  - 1 tbsp 
  • Tomato puree 1 tbsp
  • Oil - 1 tsp 
  • Mint [finely chopped]  - 1½ tbsp 
  • Pepper powder or Chilli flakes - as per taste 
  • Salt- as per taste 
DIRECTIONS:
Step 1 Cook pasta in water. Rinse, drain and set aside to coul.  Step 2 Add all the  veggies and season with salt and pepper.  Step 3 Preheat the oven to 170°C.  Step 4 Grease the muffin tins and fill with the veggies, pasta and tomato puree. Step 5 Evenly distribute the muesli. Step 6 Drizzle oil over it and bake for 15 to 18 mins or until a toothpick inserted in the center comes out with only a few moist crumbs.  Step 7 Let it coul for 5 mins and then scoop them out.
