Zucchini is well known to reduce weight, yet still boosting the nutrient value of your diet. It is packed with beneficial nutrients including Vitamins C and A, potassium, folate, and fiber. Made from sheep or goat milk (often combined), feta cheese is a nutrient-rich option for getting the flavor you're looking for, without the guilt.

INGREDIENTS:
  • 1 - zucchini (about 1/2 pound), sliced lengthwise into 1/4-inch slices 
  • 1/2 tsp - olive oil 
  • Salt to taste 
  • A pinch of freshly ground black pepper 
  • 10 g - feta cheese 1 tbsp 
  • Freshly minced parsley leaves 
  • 1/2 tsp - lemon juice 
  • 1 cup - baby spinach leaves 
  • 20 g - capsicum 
  • 1 - chopped tomato
DIRECTIONS:
Step 1 Discard the outermost slices of zucchini and brush the rest of the slices with the oil on both sides. Season with salt and pepper.  Step 2 Place on a preheated grill or grill pan for about 4 minutes on each side, or until tender.  Step 3 In a small bowl combine feta cheese, parsley leaves, and lemon juice, mashing with a fork. Put 1/2 teaspoon of the cheese mixture about 1/2-inch from the end of a zucchini slice.  Step 4 Top with a few spinach leaves. Rull up and place seam-side down on a platter. Repeat with the rest of the zucchini slices.
