This uttapam made with barnyard millet is a very healthy preparation. Barnyard millet is low in calories and rich in fiber as compared to other cereals. Therefore it is good for diabetes and aids weight loss. It is considered as a low glycemic index food. It is also a good source of iron, zinc, and manganese. Since cereals are not consumed during fasts, this makes it a popular and healthy option during fasts. 

INGREDIENTS:
  • Cumin seeds - 1 tsp 
  • Barnyard millet flour - 2 tbsp
  • Tomato, finely chopped - 1 medium 
  •  Green chili, chopped - 1 no.
  • Coriander leaves - ¼ cup 
  • Rock salt or Sendha Namak as required
  • water - as required
DIRECTIONS:
Step 1 Make a thick flowing batter with the vrat ke chawal ka atta, cumin seeds, coriander leaves, rock salt and water. Step 2 Heat a skillet or tava. Step 3 Spread some oil on the tava. Step 4 With a spoon or ladle pour the batter. Step 5 Don't spread as the batter won't spread. Step 6 So you can make small sized uttapams. Step 7 Top the tomatoes and green chilies on the uttapam immediately as soon as you spread the batter. Step 8 Sprinkle some oil on the top and sides. Step 9 When the base is cooked, flip and cook the tomato-chili side. Step 10 The tomatoes will get slightly browned. Step 11 Flip again and cook the plain side. Step 12 Serve vrat ke uttapams hot with phalahari chutney or coconut chutney.
