Very common and popular dish Veg Kolhapuri can be made healthier by adding raw banana instead of potato which adds more fibre to the food the various vegetables that are added provide us with the essential vitamins and minerals the Indian spices added such as cinnamon, cumin seeds, black pepper provide us with the phytonutrients

INGREDIENTS:
Vegetables to boil:
  • Raw banana [peeled and diced] - 1 no. 
  • Carrot [peeled and diced] - 1 tbsp
  • French beans [chopped] - ¼ cup 
  • Cauliflower [florets] - ¼ cup 
  • Salt - As per taste
For masala:
  • Sesame seeds - ¼ tsp 
  • Poppy seeds - ¼ tsp 
  • Cumin seeds - ¼ tsp
  • Coriander seeds  - ¼ tsp
  • Cinnamon stick  - 1 no. 
  • Cloves - 1 no. 
  • Cardamom pod  - 1 no.
  • Black pepper - ¼ tsp
  • Dried Kashmiri red chilli - ½ no.
Other ingredients:
  • Oil - 1 tsp 
  • Onion [chopped] - 2 tbsp 
  • Ginger-garlic paste - ½ tsp 
  • Tomato [chopped] - 2 tbsp 
  • Capsicum [cubed] - ¼ cup 
  • Turmeric / Haldi - ¼ tsp
  • Salt - to taste 
  • Water - ¼ cup 
  • Coriander leaves [chopped] - 2 tsp 
  • Coconut [grated] - 2 tsp [optional]
DIRECTIONS:
Step 1 Boil vegetables along with little salt for 10 minutes. Step 2 In a large kadhai dry roast, sesame seeds, poppy seeds, coriander seeds, and cumin seeds. Step 3 Also take cinnamon, cardamom, cloves, pepper, red chilli, and coconut. Step 4 Dry roast and blend to smooth powder without adding any water. Keep aside. Step 5 Heat oil and saute onions add ginger-garlic paste. Step 6 Then add tomato and saute well. Step 7 Add capsicum and saute slightly. Step 8 Also, add prepared masala and salt to taste. Step 9 Saute well till the oil separates from the masala. Step 10 Add boiled vegetables, water, and coriander leaves. Step 11 Cover and simmer for 15 minutes. Serve hot.
