Garlic contains useful minerals such as phosphorous, calcium, and iron, as well as trace minerals like iodine, sulfur, and chlorine. It is rich in phytochemical allicin which is anti-inflammatory and antithrombotic and lowers bad cholesterol. Onions are rich in oligosaccharides which are prebiotics that improve gut health.They are rich in phytophenols and flavonoids.

INGREDIENTS:
  • Chicken - 75 g
  • Onion (finely chopped) - 1 medium size 
  • Garlic, crushed - 1-3 cloves
  • Ginger, peeled & grated - 1 small piece
  • Green curry paste - ½ tbsp 
  • Chicken stock - ½ cup 
  • Lemon, juiced - 1 tsp
  • Coriander leaves, (chopped) - 1 tbsp 
  • Mint leaves -  4-6 no.
  • Oil - ½ tsp 
DIRECTIONS:
Step 1 Heat oil in a non-stick pan over medium heat. Add onion, garlic, and ginger. Sauté for 3 minutes or until tender.  Step 2 Add green curry paste and sauté for 1 minute or until aromatic. Step 3 Add chicken and chicken stock. mix it well and simmer for 2-3minutes.  Step 4 Add lemon juice, coriander leaves, mint leaves. Simmer for 10minutes on low heat.  Step 5 Pour the curry in a serving bowl and garnish with mint and coriander leaves.
