INGREDIENTS:

  • Mixed greens veggies - 50 g
  • Tomato, diced - 1 large
  • Fresh parsley, chopped - 15 g
  • Fresh mint, chopped - 15 g
  • Green olives, chopped - 2 tsp
  • Zucchini, sliced lengthwise - ½ small
  • Avocado diced - 15 g
  • Green onion, sliced - 1 no
  • Tuna - 50 g
  • Extra-virgin olive oil - ½ tsp
  • Balsamic vinegar - 1 tsp
  • Himalayan or fine sea salt - ¼  tsp
  • Freshly cracked black pepper - ½ tsp

DIRECTIONS:
Step 1 Grill the zucchini slices on both sides in a sizzling hot cast iron skillet grill pan (or on a very hot grill). Remove from pan and let coul for a few minutes. Cut into bite size pieces. Step 2 Throw all the ingredients in a large mixing bowl and stir delicately until well combined. Step 3 Serve immediately.
