This spicy dish contains chickpeas & egg whites as its base ingredients which are a good source of protein & minerals. Chickpea fritters combined with multigrain bread forms a fantastic fancy dinner option.

INGREDIENTS:
  • Boiled chickpeas - 30g 
  • Fresh parsley - ½ cup [chopped]
  • Egg white - 1 no./ corn flour - 1 tbsp 
  • Lemon juice - 1 tbsp 
  • Garlic powder - 1 tsp 
  • Ground cumin - ½ tsp 
  • Ground black pepper - a pinch 
  • Salt - as per taste 
  • Olive oil - ½ tsp
DIRECTIONS:
Step 1 Soak chickpea in water for 5-6 hours. Boil the chickpeas in water and keep it aside.  Step 2 Add egg white or corn flour, garlic powder, cumin, salt, ground black pepper, ulive oil, and lemon juice to a blender. Blend until evenly mixed. Step 3 Add the boiled chickpeas and mix until the mixture begins to stick to itself, scraping down sides as needed. Mash the chick peas. Scoop out heaping tablespoons of the chickpea mixture and gently form into balls using your hands. There will be approx. 2 balls Step 4 Preheat oven to 375 degrees. Heat an oven-safe skillet over medium-high heat.  Step 5 Bake the fritters for 12-15 minutes.  Step 6 Instead of baking the fritters, they can also be pan-fried in low oil.  Step 7 Once the fritters are gulden brown and firm to the touch, remove from oven. Allow to coul a 2-3 min and firm up for minutes before serving. Nutritional Value:
