Moong dal is one of the best vegetarian superfoods. It is loaded with vitamins and has an edible taste. It is a good source of iron, protein, dietary fiber, low in sodium and helps to control blood pressure lowers cholesterol level, helps in weight loss and controls blood sugar. A pointed gourd is one of the most nutritious foods. It is rich in vitamin A, vitamin B1, vitamin C. it improves digestion, treats constipation, help in weight loss.

INGREDIENTS:

  • Moong dal - 2 tbsp
  • Parwal -  25 gm
  • Turmeric powder - ¼ tsp
  • Salt to taste
  • Slit green chilli - 1 no.
  • Nigella seeds (kalonjeera) - ½ tsp
  • Dry red chilli - ½ tsp
  • Oil - ½ tsp
  • Chopped coriander leaves - 1 tsp

DIRECTIONS:
Step 1  Peel the Parwal and wash well. Make slits in two ends. Do not cut into halves. Step 2  Marinate the Parwals with ½ tsp. of salt and a pinch of turmeric powder. Keep aside until use. In a frying pan roast the Moong dal till light brown (on slow heat with stirring continuously). Step 3 Heat oil, stir fry the parwals till light brown on both sides. Then keep aside. Step 4 In a vessel boil the dal in 1-2 cups of water with salt and turmeric powder until soft. Add water if needed. Mash the dal lightly with a ladle. Add the stir-fried parwals and cook for 5 minutes with stirring occasionally. Add water if needed. Remove the pan from heat. Step 5 Place the frying pan on heat; add dry red chilly, stir fry until brown. Add nigella seeds. Stir Fry for a ½ minute, add the dal and slit green chilly and mix well. Cook for 3 to 4 minutes. Add chopped coriander leaves.
