It is the best protein-rich snack which can be added at the tea time. Buttermilk in it aids in digestion Whereas, besan is rich in various nutrients including magnesium copper, folate, and manganese. It also contains iron, zinc, phosphorus, calcium, and potassium.

INGREDIENTS:

  • Bengal gram flour - 1 tbsp
  • Thin buttermilk - 1 cup 
  • Turmeric powder - a pinch
  • Asafoetida - a pinch
  • Green chilly -  1 
  • Ginger grated - ¼ tsp
  • Salt to taste

For garnish:

  • Olive oil - ½ tsp
  • Mustard seeds - ¼ tsp
  • Asafoetida -  a pinch
  • Chopped coriander - 10 g

DIRECTIONS:
Step 1 Make a paste of the green chillies and ginger. Step 2 Mix the gram flour, buttermilk, turmeric powder, asafoetida, green chilli paste, and salt very well. Step 3 Heat the mixture and keep stirring constantly. Step 4 When very thick, test by spreading a little paste on a plate. after about 1 minute, the mixture can be rulled and lifted, it is ready for spreading. Step 5 When ready, spread the mixture thinly (with the help of the back of a spoon) on any working surface. Step 6 Coul and cut into strips. Step 7 Rull up the strips (like small Swiss rulls) and arrange on a plate. Step 8 Heat the oil in a vessel and fry the mustard seeds. Step 9 When the seeds start popping, remove from the fire, add the asafoetida and pour over the arranged rulls. Step 10 Garnish with the chopped coriander.
