Spinach, ragi oats uttapam is a nutrient-dense meal rich in calcium, fiber, protein, potassium, vitamin k & magnesium. This recipe is excellent for bones, teeth, eyes & the digestive system. The fiber in ragi & oats helps lose weight & beneficial if constipated.

INGREDIENTS:
  • Ragi flour - 1 tbsp
  • Rice flour - 1 tbsp
  • Oats flour - 2 tbsp
  • Spinach - 2 tbsp [blanched/puree/chopped]
  • Curd - 2 tbsp
  • Ginger - ¼th tsp [minced]
  • Green chilli - ½ no. [chopped]
  • Onions - 1 tbsp [chopped]
  • Capsicum - 1 tbsp [chopped]
  • Tomatoes - 1 tbsp [chopped]
  • Coriander - 1 tbsp [chopped]
  • Salt - to taste
  • Oil - ½ tsp
  • Water - as required to make a pancake batter
DIRECTIONS:
Step 1 Blanch & puree or finely chop the spinach. Step 2 In a bowl, combine all flours, spinach, curd, water, ginger, salt & spices. Mix well & add water until the batter has a dosa/pouring consistency. Step 3 Heat a non-stick Tawa, grease it with 1/4th tsp oil. Pour the batter and spread it evenly in a circular shape. Step 4 Add the chopped onions, capsicum, tomatoes, coriander, and green chilies on top. Step 5 Cook on low heat until the uttapam is cooked at the bottom. Step 6 Flip the uttapam & let the other side cook too. Step 7 Enjoy while hot with mint-coriander chutney or any from the BN recipes.
