Indian style scrambled eggs topped with veggies, jalapeno and egg whites make it protein-rich and cholesterol-free. 

INGREDIENTS:
  • Onion (finely chopped) - ½ tsp
  • Fresh ginger minced - ½ tsp
  • Cumin seed (ground) - ½ tsp
  • Jalapeno - ½ tsp
  • Tomato - 1 medium
  • Egg whites - 3 fresh
  • Coriander leaves (chopped) - 1 tsp
  • Oil - 1 tsp
  • Salt - to taste
DIRECTIONS:
Step 1 Heat oil in a non-stick pan add onion, ginger and cumin; stir-fry until onion is just softened, about 2 minutes. Step 2 Add tomato and jalapeno; stir-fry 2 minutes longer.  Step 3 Beat eggs, coriander leaves and salt in a bowl until blended.  Step 4 Pour over mixture in pan. As eggs begin to set, gently pull the eggs across the pan with an inverted turner, forming large soft curds.  Continue cooking until thickened and no liquid remains in the egg.  Step 5 Do not stir constantly. Serve immediately.
