Indian style scrambled eggs topped with veggies, jalapeno and egg whites make it protein-rich and cholesterol-free.

  • Onion (finely chopped) - ½ tsp
  • Fresh ginger minced - ½ tsp
  • Cumin seed (ground) - ½ tsp
  • Jalapeno - ½ tsp
  • Tomato - 1 medium
  • Egg whites - 3 fresh
  • Coriander leaves (chopped) - 1 tsp
  • Oil - 1 tsp
  • Salt - to taste
DIRECTIONS:
Step 1 Heat oil in a non-stick pan add onion, ginger and cumin; stir-fry until onion is just softened, about 2 minutes. Step 2 Add tomato and jalapeno; stir-fry 2 minutes longer.  Step 3 Beat eggs, coriander leaves and salt in a bowl until blended.  Step 4 Pour over mixture in pan.
