Foxtail millet is an annual grass grown for human food. It is the second-most widely planted species of millet and the most important in East Asia. In India, foxtail millet is still an important crop in its arid and semi-arid regions. In South India, it has been a staple diet among people for a long time from the Sangam period. It is a good source of dietary fibre, proteins and vitamins.

INGREDIENTS:
  • Foxtail millet - 30 g
  • Ghee - 1 tsp
  • Mustard seeds - 1 tsp 
  • Coriander seeds - 1/8 tsp
  • Shallots - 10-12 nos
  • Green chilli - 1 no
  • Tomato chopped - 1 large
  • Chopped vegetables - 1 cup 
  • Turmeric powder - 1/4 tsp
  • Asafoetida - 1 pinch 
  • Coriander seeds chopped - 2 tbsp
  • Dal [any as per your choice] - 15 g
  • Red chilli powder - 1 tsp
  • Sambhar masala - 1 tsp

DIRECTIONS:
Step 1 Pressure cook the millet and Dal in the pack with 5 cups water (1:5 ratio) for 2 whistles on high flame and 2 whistles on low flame. Step 2 Heat ghee, crackle mustard seeds, pop in coriander seeds Step 3 Fry chopped shallots and green chilli for a minute. Put in chopped tomatoes and cook until mushy. Step 4 Add chopped vegetables, turmeric powder and other spices along with water. Close and cook until vegetables are done but not mushy. Step 5 Mix well and add the cooked millet+dal, salt and mix well. Step 6 Sprinkle asafoetida, chopped coriander and serve hot.
