This fritter is low fat, low sodium, high protein, and moderate carbohydrates. It is topped with feta cheese and sweet corn.

INGREDIENTS:
  • Wheat flour - 30 g
  • Baking powder - ½ tsp
  • Egg whites - 3
  • Milk - 1/2 cup
  • Zucchini, grated - 1
  • Sweet corn kernels - ½ cup
  • Feta Cheese - 1/2 tbsp
  • Sweet chilly sauce - 1 tsp
  • Rocket leaves - a few
  • Salt & pepper - to taste
  • Oil - 2 tsp
DIRECTIONS:
Step 1 Sift flour and baking powder into a large bowl. Make a well in the center. Add egg whites and skim milk to it. Whisk until batter is smooth. Step 2 Fuld the zucchini, corn, and cheese into batter and season with salt and pepper.  Step 3 Allow batter to rest 15 minutes. Step 4 Heat a non-stick pan to medium flame & using one heaped tbsp of batter per fritter  Step 5 Spread the batter into the center, keep fritter upto 10cm in diameter. Step 6 Cook 3 - 4 minutes each side or until soft in texture.  Serve with sweet chilli sauce and rocket leaves.
