Cauliflower paratha is a rare combination used but this is quite filling if had with dal/ pulse. Containing whole wheat flour and oats, this recipe is high in fiber, antioxidants, phytonutrients and also B vitamins. To make it a complete combination of carbohydrates, proteins, & fats it should be eaten with a Katori of curd, raita, dal etc. It is a kind of mini meal option.

INGREDIENTS:
  • For the Dough:
  • Wheat Flour - 2 tbsp
  • Oats powder - 1tsp
  • Salt use minimum, to taste
  • Water - as needed to make a soft dough
  • For the filling:
  • Finely Shredded Cauliflower - 20 g
  • Ginger garlic paste - ½ tsp
  • Carom Seeds (Ajwain) - 1 pinch
  • Cumin seeds - pinch
  • Cilantro (finely chopped) as per taste
  • Green Chilies (finely chopped) - 1/2no.
  • Turmeric Powder - a pinch
  • Amchur Powder - a pinch
  • Salt use minimum, to taste
  • Oil - ½ tsp
DIRECTIONS:
Step 1 To make the dough: Step 2 Mix together the flour and salt. Step 3 Add water little by little and keep kneading to make a soft dough. Step 4 Add a few drops of oil to smooth out the dough. Step 5 Cover and let the dough rest while we work on the filling. The resting of the dough makes it more pliable. Step 6 To make the filling: Step 7 Finely shred the cauliflower using a food processor or a hand grater. Heat oil in a pan and add the cumin seeds and ajwain [carom seeds]. Step 8 Add the ginger garlic paste, green chillies and turmeric powder. Step 9 Fry for about 10-15seconds. Add the shredded cauliflower, required salt & amchurpowder. Mix everything and cook on medium-high flame for just a minute or two. Step 10 This time is sufficient for the flavours to blend together and the moisture to evaporate. Step 11 Finally, mix in the chopped cilantro and switch off. Step 12 To make the parathas: Step 13 Divide the dough into lemon sized balls. Step 14 Rull out each ball into a small circle (about 3-4"). Put about 2 tbsp of the filling in the centre. Step 15 Pull the edges of the dough together around the filling to seal the mixture. Next, take a stuffed ball and flatten it gently. Dip it in dry flour and rull out gently to make about a 6-7"paratha. Step 16 I prefer to keep the sealed side up while rulling. In the meantime, heat a griddle or tawa. Step 17 Place the rulled out paratha on the hot tawa. Step 18 When few bubbles appear, flip the paratha. Step 19 Apply a few drops of oil on the top side. Turn again and cook the paratha till brown spots appear on both the sides. Serve with curd, any type of raita, chana masala or even with some curries.
