Beetroot is rich in iron, antioxidants, fiber, vitamin C, folate and other minerals. Baked beet chips are low in fat, therefore it is a healthy snack.

INGREDIENTS:
  • Beet root, uncooked - 1[small]
  • Olive oil - ¼ tsp 
  • Salt - as per taste
DIRECTIONS:
Step 1 Heat oven to 350° F. Peel 1 small uncooked beetroot and cut into thin slices. Toss with 1/4 ulive oil and salt. Step 2 Spread slices onto a baking sheet in a single layer and bake for about 15 minutes.  Step 3 Flip beetroot slices and bake for an additional 10 to 15 minutes, or until beetroot slices have dried out and become crisp.  Step 4 Coul before serving. Chips can be stored in an airtight container for up to three days.
