Vegetable open toast sandwich is the easiest to prepare evening snack. Containing vegetables such as onions, tomatoes, and corn makes it even more colourful and healthy. Low in fat, simple to prepare and providing satiety, this snack can be eaten with homemade coconut-free chutney. Also, adding the vegetables on multigrain bread gives an energy boost with an increase in its fiber content.  Adding multigrain to the diet would be a better option as compared to simply white bread.
(You can use 2 slices of bread for the open toast sandwich)

INGREDIENTS:

  • Whole wheat or multigrain bread -  1 slice
  • Milk -  2 tsp
  • Onions, chopped - 10g
  • Tomato, chopped -  ½ medium
  • Boiled corn (optional) -  1 tbsp
  • Mustard powder -  ½ tsp
  • Green chilli chopped -  1 small
  • Salt - to taste
  • Pepper to taste

DIRECTIONS:
Step 1 Combine the milk, onions, tomatoes, corn, mustard powder, green chillies, pepper and salt and keep aside.  Step 2 Toast the bread slice in the toaster on both sides till it is gulden brown.  Step 3 Spread the prepared mixture on each toasted slice.  Step 4 Grill in an oven at 175°c (350°f). Step 5 Serve hot with mint coriander chutney.
