Turia is well loved by Indians. Ridge gourd is extremely rich in dietary fiber. Turai is disliked by many of us due to its unusual appearance.  So, it has been made more delicious and nutritious by adding it to moong dal. Moong dal is one of the easiest dals to digest and also provides plenty of proteins and iron.

INGREDIENTS:

  • Ridge gourd (turai) peeled - 1 katori 
  • Split green gram skinless (dhuli moong dal) soaked - 1 cup
  • Onions - 1 katori 
  • Oil - 1 tsp
  • Cumin seeds - 1 tsp
  • Mustard seeds - ½ tsp
  • Asafoetida - a pinch 
  • Salt - to taste 
  • Coriander powder - 2 tbsp
  • Turmeric powder - ¼ tsp
  • Garam masala powder - 1 tbsp
  • Red chilli powder - 1 ½ tbsp
  • Green chillies halved - 2 
  • Ginger paste - 1 tsp

DIRECTIONS:
Step 1 Heat oil in a pressure cooker.  Step 2 Add cumin seeds, mustard seeds, and onions to the oil in the cooker and saute. Add asafoetida and moong dal and mix. Step 3 Cut turai into big cubes and add. Add salt, coriander powder, turmeric powder, garam masala powder, red chilli powder, green chillies and mix well. Add 2 tbsps. Water and mix well.  Step 4 Add ginger paste and mix. Step 5 Cover the cooker and cook under pressure till 1 whistle is given out.  Step 6 Switch off the heat and let the mixture remain in the cooker for 10 minutes.
