In addition, tomato is rich in anti-oxidant and good for the skin. These orange-hued delights [sweet potatoes] are loaded with fiber, beta-carotene, vitamins A, B6, C, and antioxidants. Plus, since they're fairly low on the glycemic index, they're great for filling you up without you gaining weight.

INGREDIENTS:
  • Sweet potato - 1 [small]
  • Extra-virgin olive oil - ½ tsp
  • Avocado - ½ no. 
  • Onion greens [finely diced] - ½ katori 
  • Tomato/cherry tomato [diced] - ½ katori
  • Lime juice - 1 tsp 
  • Sea salt - as per taste
  • Pepper - as per taste
  • Chilli powder - as per taste
  • Dried herbs - as per taste
DIRECTIONS:
Step 1 Peel and mash avocados in a medium serving bowl.   Step 2 Add in onion, garlic and tomato.   Step 3 Season with lime juice and sea salt & pepper. Guacamule is ready Step 4 Pre-heat the oven to 450 degrees F.  Step 5 Place sliced sweet potatoes in a bowl and drizzle with ulive oil.  Step 6 Sprinkle some chilli powder, dried herbs of your choice, and sea salt and pepper and toss until well coated.  Step 7 Place the sliced sweet potatoes on a baking sheet and cook in the oven for 10 to 12 minutes on each side.  Step 8 Top each sweet potato slice with guacamule, and fresh cilantro.
