Moong dal is a good source of protein and dietary fiber. It is low in fat and rich in potassium, calcium, and B complex vitamins. Coriander has multiple health benefits as it is a wonderful source of dietary fiber. Curry leaves help in cleansing the body by flushing out harmful toxins from the body. It also helps in burning unwanted fat, thus promoting weight loss.

INGREDIENTS:

  • Split yellow moong dal (Raw) - 25-30 gm
  • Mustard seeds - ¼ tsp  
  • Cumin seeds - ¼ tsp
  • Hing (optional) - a pinch
  • Turmeric powder - ¼ tsp 
  • Red chili powder - ½ tsp 
  • Ginger paste - 1 tsp 
  • Coriander powder - 1 tsp
  • Cumin powder - ½ tsp 
  • Fresh coriander chopped - 2-3 tbsp
  • Curry leaves - 1 tbsp
  • Oil - 1/2 tsp (cooking spray also works)
  • Salt - to taste
  • Water (to cook) - 1 cup


DIRECTIONS:
Step 1 Wash the dal in water 3-4 times and soak it in 1 cup warm water for half an hour. Step 2 Heat oil in a wide pan over medium heat. When it is hot, add mustard and cumin seeds. Step 3 When the seeds begin to sizzle, add asafoetida, red chilli powder, turmeric powder, coriander and cumin powder, ginger paste, and curry leaves and stir fry for a few seconds. Step 4 Add dal with the water, slowly, along with salt, and mix well. Step 5 Cover the pan and reduce the heat to low. Step 6 Cook the lentils till done. This will take about 7 to 10 minutes. Step 7 When done, remove the pan from the heat. Step 8 Add fresh coriander and serve hot with rice or roti.
