Sweet potatoes are packed with many essential vitamins such as pyridoxine (vitamin B-6), and thiamin (vitamin B-1), niacin, and riboflavin. It is also rich in Vitamin A. They, unlike potatoes, contain fiber useful for weight management. Soya granules are rich in proteins. Soya is low in fat and sodium, and may thus help to reduce weight and the risk of heart disease.

INGREDIENTS:

  • Soya granules - 20 g
  • Sweet potato [grated] - 2 tbsp 
  • Cumin seeds - ¼ tsp
  • Turmeric paste - ¼ tsp
  • Coriander powder - ½ tsp
  • Green chilli paste - 1 tsp 
  • Amchur powder - ¼ tsp
  • Coriander leaves[chopped] - 2 tsp 
  • Oil -  ½ tsp
  • Salt - as per taste

DIRECTIONS:
Step 1 Soak soya granules for 15 minutes in sufficient water. Drain and squeeze out excess water with your hands. Step 2 Heat ½ tsp oil in a non-stick pan, add cumin seeds, turmeric powder, amchur powder, and coriander powder and mix. Add soya granules, green chilli paste, salt and saute. Add coriander leaves and mix.  Step 3 Transfer the mixture onto a plate and set it aside to coul. Heat sufficient oil in another non-stick pan. Mash the sweet potato and put it into a bowl, add salt and mix.  Step 4 Divide into 2 equal portions, shape into balls. Shape each ball into a Katori, stuff with soy mixture, gather the edges and seal.  Step 5 Shallow fry in hot oil, turning sides, till gulden brown on both sides.  Step 6 Drain on absorbent paper and serve hot.
