Mustard leaves (Sarson) contains a very good amount of fibre that helps control cholesterol level by interfering with its absorption in the gut. Spinach leaves (palak) help improve blood glucose control in diabetics and lowers the risk of cancer. Bathua acts as a laxative and also a blood purifier. Oatmeal is rich in soluble fibre which helps in weight loss.

INGREDIENTS:

  • Mustard leaves [chopped] - 1 cup [100 g]
  • Spinach leaves [chopped] - 1 cup [100 g]
  • Bathua [chopped] - 2 tbsp
  • Oatmeal - 1 tsp
  • Ginger [chopped] - 1 tsp
  • Onion [chopped] - 1 tbsp 
  • Green chillies [chopped] - 2 nos.
  • Salt - as per taste
  • Oil - ½ tsp

DIRECTIONS:
Step 1 Heat 1 cup of water in a pot. Chop all the greens. When the water comes to a boil, add the chopped greens.  Step 2 Add 1 finely chopped green chilly, press a little, cover and cook for 20-25 minutes or till the greens become soft. Remove pot from heat and churn all the greens. Step 3 Add the oatmeal and mash as you mix. Heat oil in a non-stick pan, add ginger and mix well.  Step 4 Add remaining finely chopped green chillies and saute. Add onions and saute. Step 5  Transfer the saag from the earthen pot to the pan. Cook for 15-20 minutes. Add salt and mix well. Transfer into a serving bowl, garnish and serve hot.
