Quinoa is gluten-free and high in protein and fiber. It is also low in the glycemic index which is good in blood sugar control. Flax seeds rich in omega-3 helps in weight loss and diabetes.

INGREDIENTS:
  • Couscous - 1 tbsp 
  • Quinoa - 1 tbsp
  • Chicken broth/water - 1 cup
  • Chicken / Beans - 50gms / 2 tbsp
  • Veggies of your choice- 1 tbsp
  • Onion [chopped] - 2 tsp 
  • Chopped Garlic - 1 tsp
  • Flaxseeds - 1 tsp
  • Green pepper chopped - 2 tsp 
  • Thyme -  1/2 tsp (optional)
  • Olive oil - ½ tsp
DIRECTIONS:
Step 1 Rinse and drain couscous and quinoa separately. Step 2 In a medium saucepan, heat oil over medium heat. Add onion and garlic, cook and stir for 3 minutes. Step 3 Add quinoa and flaxseeds; cook and stir for about 5 min or until quinoa is lightly browned. Step 4 Add couscous and chicken broth. Bring to boiling; reduce heat. Cover and simmer for 15 min. Stir in the green pepper. Step 5 Cover and cook for 5 minutes more or until quinoa and couscous are tender. Step 6 Let stand, covered, for 5 minutes. If desired, garnish with thyme.
