Jhunka Bhakar is the traditional staple meal consumed in Maharashtra. It provides good quality protein from the cereal-pulse combination it contains. Brown rice flour is rich in vitamin B3, vitamin B6, magnesium, phosphorus, iron, zinc, and manganese. Gram flour has a low glycemic index and is low in calories, hence it is beneficial for weight loss & diabetics.

INGREDIENTS:

For Tartlets:
  • Brown rice flour - 2 tbsp 
  • Salt - as per taste 
For Jhunka:
  • Gram flour - 2 tbsp
  • Onions [sliced] - 1 tbsp 
  • Mustard seeds - ¼ tsp 
  • Curry leaves - 5 nos.
  • Green chilli [minced] - 1 tsp 
  • Coriander leaves [chopped] - 1 tsp 
  • Salt - as per taste 
  • Oil - ½ tsp

DIRECTIONS:
Step 1 To make the tartlets, preheat the oven to 180°C. Mix 1 cup rice flour and salt in a bowl and sieve. Add sufficient warm water to make a soft dough. Step 2 Divide the dough into equal portions and shape them into round balls. Rull out into small roundels smaller than the tartlet moulds.  Step 3 Grease the tartlet moulds and line the roundels into the tartlets. Place the moulds on the baking tray and place them in the preheated oven. Bake for 10-12 minutes. Step 4 Demould and keep aside. To make the jhunka, heat oil in a non-stick pan and add mustard seeds and curry leaves. Saute till the mustard seeds crackle.  Step 5 Add onions and green chilli and saute till onions turn translucent.  Step 6 Add besan, and salt and mix well. Add sufficient water and cook on medium heat by continuously stirring it.  Step 7 Add chopped coriander and mix well. Remove from heat and let it coul. Now shape the jhunka into a conical shape and place them into the tartlets. Serve hot.
