This warming bowlful of filling, low-fat soup is perked up with spices which add aromatic flavor to the dish. The consumption of lentils provide a good source of plant proteins, iron, and fiber which aids weight loss, lowers LDL levels, stabilizes blood glucose levels. Carrots, a rich source of vitamin A, helps in improving vision, has anti-aging properties, reduces cholesterol levels, helps in reducing cancer risk.

INGREDIENTS:
  • Masoor dal [Split red lentil] (boiled) - 1.5 tbsp 
  • Sliced carrot - 1 medium 
  • Sliced red pumpkin (bhopla/kaddu) - 1 katori
  • Chopped onion - 1/2 medium
  • Garlic clove - 2-3 cloves 
  • Black pepper powder - 1/4th tsp
  • Vegetable stock / Plain water - 100 ml
  • Salt - as per taste
  • Oil - 1 tsp
DIRECTIONS:
Step 1 Heat oil in a non-stick pan, add garlic cloves, onion, carrot and pumpkin and saute for few minutes.  Step 2 Add vegetable stock, salt, black pepper powder, and stir.  Step 3 Add boiled masoor dal and mix well.  Step 4 Cover and cook on medium heat till the dal is soft and completely cooked.  Step 5 Blend in a mixer. Step 6 Pour it in a bowl and serve and Enjoy!
