A very healthy and quick recipe to prepare. It is packed with the goodness of protein from the egg whites and colourful vegetables providing us with different vitamins and minerals. Another plus point is, it is low in fat too which makes it a perfect recipe for people who want to shed some kilos. Also, flax-seeds provide healthy fats and soluble fiber.

INGREDIENTS:
  • Egg whites - 3 nos.
  • Chopped spinach - 1/3 cup 
  • Finely chopped bell pepper (red, green, or yellow) - 1 tbsp 
  • Finely chopped green onion - 1tbsp 
  • Flaxseeds - 1 tsp
  • Freshly grounded black pepper - as per taste
  • Salt - as per taste
  • Oil - ¼ tsp
DIRECTIONS:
Step 1 Grease microwave-safe mug with a 1/4th tsp oil.  Step 2 In a bowl add egg whites, chopped spinach, chopped bell pepper, chopped onion, salt, black pepper powder and flaxseeds. Mix them properly.  Step 3 Pour the mixture into the microwave safe mug.  Step 4 Microwave it on high temperature for one minute.  Step 5 Remove the mug after 1 minute. Stir the mixture and microwave it again for about 30 seconds or until eggs are set.  Step 6 Serve hot.
