Foxtail millet is gluten free cereal. It is also rich in protein, and low in fat. It has a good amount of fiber content, calcium, iron, potassium, magnesium, and carbohydrates. It is also high in anti-oxidants and helps in weight loss.

INGREDIENTS:
  • Foxtail millet - 2 tbsp
  • Mixed veggies- ½ cup (carrot, beans, peas)
  • Urad dal- 1 tsp
  • Onion- 10g 
  • Tomato- 10g
  • Peanut- 5 g
  • Grated ginger- 1 tsp 
  • Green chilli- 1no., finely chopped
  • Mustard seeds- ¼ tsp
  • Lemon juice (squeeze on top)- as per taste
  • Curry leaves- a few
  • Salt- as per taste
  • Water- 1 cup
  • Oil- ½ tsp
DIRECTIONS:
Step 1 Heat oil in a pan on medium heat.  Step 2 Add mustard seeds and allow it to crackle. Once it crackles add curry leaves, split urad dal and peanuts.  Step 3 Saute for a few minutes until the dal gets roasted.  Step 4 Once roasted add chopped onions, ginger, green chillies and saute till onion turns translucent.  Step 5 Add carrots, beans, peas and let it cook for a minute or two stirring in between.  Step 6 Now add bajra, mix well and saute for a few minutes. Step 7 Keep stirring bajra may get stick to the pan's bottom. Pour 1 cup of water. Step 8 Add salt and tomatoes into it and give the mixture a good stir.  Step 9 Cover the pan and allow the upma cook until all the water is evaporated stirring occasionally. Step 10 Take the pan off the heat and allows the upma to rest in the covered pan for about 10 minutes.  Step 11 The heat in the pan makes the upma to get cooked evenly. Open the lid and add lemon juice. Step 12 Remove in a plate and serve.
