Moong dal is a good source of protein and dietary fiber which help to decrease high cholesterol. Couscous is a good source of dietary protein and our body relies on dietary protein  to support healthy skin, muscles, organs and other body tissues. Peas are low fat but high in protein, fiber and micronutrients. Cauliflower is a member of the cruciferous family of vegetables, believed to fight cancer because of the sulfur-containing compound present in it.

INGREDIENTS:
  • Couscous [raw] - 15 g
  • Yellow Moong dal [raw] - 15 g
  • Onions [chopped] - 1 tbsp 
  • Peas - 10 g
  • Tomato [chopped] - 1 tbsp
  • Cauliflower florets - 10 g
  • Ginger- garlic paste - 1tsp 
  • Turmeric powder - ½ tsp
  • Cumin seeds - ½ tsp
  • Ginger- green chilli paste - 1 tsp 
  • Black pepper - 4 nos. 
  • Red chili powder - ½ tsp
  • Cloves - 3 nos. 
  • Salt - as per taste
  • Oil - ½ tsp
  • Coriander leaves [chopped] - 1 tsp
DIRECTIONS:
Step 1 Wash and soak the couscous and moong dal in enough water for at least 15 mins.  Step 2 Drain and keep aside.  Step 3 Heat the oil in a pressure cooker and add the cloves and cumin seeds. Step 4  When the seeds crackle, add all the remaining ingredients including the moong dal and couscous and saute on a medium flame for 4 to 5 mins.  Step 5 Add 4 cups of water, mix well and pressure cook for 3 to 4 whistles. Allow the steam to escape before opening the lid.  Step 6 Stir the khichdi vigorously using a spoon, adding a little hot water if requires, so that the dal and couscous are mixed well.  Step 7 Garnish with coriander and serve hot with fresh curd
