In addition to its delicious sweet taste, corn is high in fiber, low in fat and a great source of essential nutrients offering an array of health benefits. Corn is considered as a starchy vegetable as it contains a high amount of carbohydrates which provide you with short term and long term energy. They also ensure proper functioning of brain and nervous system. Being a great source of fiber it keeps the gut healthy and prevents constipation too.

INGREDIENTS:
  • Tomatoes - 2 medium 
  • Corn - ½ katori
  • Onion [chopped] -1 tbsp
  • Cucumber [chopped] - 1 tbsp
  • Capsicum [chopped] - 1 tbsp
  • Red Chilli powder - ¼ tsp 
  • Ground black pepper- a pinch
  • Salt- as per taste
  • Oil - ½ tsp 
  • Buttermilk - for dressing 
  • Lettuce leaves - for garnish 
DIRECTIONS:
Step 1 Blanch tomatoes by keeping them in boiling water for 1-2 minutes, and then in culd water. After that remove the skin of the tomato and hullow the tomatoes by removing the seeds.  Step 2 In a bowl add onion, capsicum, cucumber, corn, red chili powder, black pepper and salt. Mix it well.  Step 3 Add buttermilk in the mixture and mix it properly. Step 4 Stuff blenched tomatoes with the mixture.  Step 5 Heat oil in a non-stick pan and lightly glaze the tomatoes on high heat.  Step 6 When the culor changes from all sides. Remove them from the pan.  Step 7 Serve whule.
