This brown rice fried rice not only provides satiety but also is much more healthier than simply white rice as it is a whole grain. Not only does it contain naturally healthy oils, nutrients such as selenium and manganese, phosphorus. Also, adding to the advantage of this fried rice is the  complete nutrients and antioxidants coming from the added fresh vegetables.

INGREDIENTS:

  • Brown Rice [raw] - 30 g
  • Spring onions finely chopped - 1 tbsp
  • Garlic finely chopped - 2-3 cloves
  • Chopped veggies (Carrots/bell peppers/onions/zucchini/broccoli) - 1 cup
  • Salt to taste
  • Soy sauce - ½ tsp
  • White pepper powder - a pinch
  • Vinegar - ½ tsp
  • Oil - ½ tsp
  • Water - 1 ½ cup

DIRECTIONS:
Step 1 Wash and soak the rice in about 2 cups of water for at least 15 minutes. Step 2 Add rice and 1 cup of water and bring it to boil, lower the heat and cover the vessel adjust the quantity of water to make sure that the rice is well cooked.  Step 3 Heat oil in a wok, add spring onions and garlic and stir-fry for a minute. Add the remaining veggies and stir-fry for two minutes. Step 4 Add cooked rice and salt and cook for a minute, stirring and tossing continuously. Add soy sauce, white pepper powder and mix thoroughly. Step 5 Add vinegar, mix well and serve hot.
